David Rio Chai: Masala Organic Chai Latte Dry Mix

Nicely balanced and not too sweet! This one pretty much nails the chai you'll find served in fine Indian restaurants. David Rio Masala Chai powder has all the traditional flavor of chai, plus I notice a subtle richness here that seems almost reminiscent of hot cocoa (albeit without the extreme sweetness). The spices here give a subtle presence such that you certainly do notice them, yet they are smooth and nicely blended at the same time. When mixing, the cinnamon (?) likes to stay at the surface somewhat instead of blending into solution, but this is a visual aspect only. There is no affect on taste. And it does gradually disappear with enough stirring. Very good and convenient chai. No brewing required. This is one of my favorites!

If you prefer your chai less-sweet, like I do, here is a little trick you do with this David Rio Chai Masala Organic Chai. Not that this is overly sweet. It's actually fairly low on the sweetness-scale compared to many other chais. But I like my chai "hot and very spicy" so reducing the sweet lets me increase the flavor without too much sweet.
David Rio Chai Masala Organic Chai dry mix has large and small particles. The large ones are quite a bit sweeter than the small ones and look like organic "raw" sugar. Maybe they are the "Organic evaporated cane juice" - I don't know? Anyway, I use an ordinary kitchen strainer to separate the large and small particles. I use the large, sweet particles for other dishes like ice cream (they retain a good amount of chainess flavor) while I make my chai from the small particles.
