Sattwa Chai: Sun Chai Tea Latte (Brew Tea)

Sattwa Sun chai is a dry mix, somewhere in between a powder and loose tea. When prepared according to the directions the result is a very pronounced, fresh "tea" flavor. The indications are to mix 2 TBS with 1 cup boiling milk and 1 cup boiling water, then steep for 7 minutes and add 1 TBS sugar. (The mix is unsweetened.) Straining is also indicated. However, I found the small granules actually taste quite good so you might not want to bother. The spices here are very mild and it is only moderately sweet and quite thin when prepared according to the directions. But of course you are in control here as regards both sweetness and "thickness" - you can simply add more or less sugar and use all milk if you prefer a creamier version.

Overall, Sattwa Sun chai mix is tea more than chai in the traditional sense. Or to be more accurate, the tea quality is very "up front" while the spices are more in the background. The tea flavor is pleasant, with a distinct "freshness" and "separateness." Perhaps this is due to being freshly brewed on the spot. Pre-brewed concentrates tend to blend all the flavors together into a single whole (much like the difference between a soup freshly made, where the individual elements stand apart more, and a stew that has had time to marinade together). The downside here is this requires a bit more work to prepare. Still Sattwa Sun chai mix does simply the steeping process somewhat as in my opinion, straining is optional. If you like tea, with just a little "chai-ness", this is a great choice.
